Mr. Dino Ventura, one of DFJ's founders ("D), was one of the most innovative sales and marketing men the UK wine sector ever saw. He looked at all aspects of society to find ideas to apply to promoting Portuguese wine. One day he was watching one of his children playing a very traditional and physical UK game called Bulldog. During the game he heard children saying Paxis as a way to express immunity from being caught. Paxis struck him as an ideal way of expressing those times when we escape from the stress of the world and can appreciate the pleasure a great wine can give. Because of that, the Paxis wines are always carefully selected to offer a great ratio price/quality/pleasure. Enjoy!

Ava Grace Merlot 2014Our Merlot is bursting with aromas of deep red fruit that fill the nose. Silky on the palate and full of layers of black cherry, plum and blueberry flavors delicately intermingled with notes of mocha, vanilla, and spice that lead into a long smooth finish.
Belle Ambiance Pinot Grigio 2015Head outdoors and sip this wine as you revel in the sunset with a spring salad and grilled halibut. WINEMAKING Fruit for the Belle Ambiance Pinot Grigio was harvested in the cool hours of the night, delivered to the winery and then immediately pressed into fermenters. A slow, low-temperature fermentation on very low grape solids and aging that took place entirely in stainless steel allowed us to capture all of the delicate fruit and floral aromas that a Pinot Grigio can deliver. TASTING NOTES Delicate floral aromas of lemon blossom, honeysuckle, and jasmine are accented by notes of white peach and juicy pineapple that fram core flavors of sweet honeydew melon, white nectarine and tart lemon. This medium-bodied wine is bright and crisp with a tangy,lingering finish.
Casas Patronales Carmenere 2013These wines have a powerful, fruity expression that reveals each variety without embellishment, unveiling all its flavours and aromas. These wines are perfect for drinking every day with meals or as an aperitif. WINEMAKING Selected grapes from our own vineyards were carefully hand-harvested. The crushed grapes were subjected to a cold maceration for two days. Then alcoholic fermentation with selected yeasts took place in stainless steel tanks at 27ºC. WINEMAKER'S COMMENTS This is an intense red-coloured wine with violet notes. Complex forest fruit and cherry aromas dominate the bouquet. The palate reveals cassis, tabacco, spices and ripe black plums. The finish is long and balanced. FOOD PAIRINGS This wine pairs well with pasta, different types of cheese, salmon, tuna, chicken, chinese food and seasoned soup.
Casas Patronales Sauvignon Blanc 2016These wines have a powerful, fruity expression that reveals each variety without embellishment, unveiling all its flavours and aromas. These wines are perfect for drinking every day with meals or as an aperitif. WINEMAKING Grapes were selected from our own vineyards and carefully hand-harvested in the early morning to preserve the aromas. Cold maceration took place in the press for two hours. This was followed by fermentation with selected yeasts in stainless steel tanks at between 12ºC and 15ºC. WINEMAKER'S COMMENTS This straw-coloured wine has fruity aromas with notes of pineapple, freshly cut grass and hints of lemon. It is friendly and very lively on the palate, juicy and has a smooth finish. FOOD PAIRINGS This wine pairs well with lean fish, ceviche and salad and is perfect as an aperitif.
La Bastarda Pinot Grigio 2015WINEMAKING It’s the vinification technique that gives the wine its zesty personality. The grapes are harvested at the perfect moment when they’re ripe and fruity but before they’ve become too sweet and lost their natural acidity. After the grapes are whisked to the winery, they’re gently pressed and the juice goes into stainless steel tanks where the fermentation proceeds under closely controlled temperatures that don’t exceed 55 degrees F. That safeguards the fruity flavors and aromas in the finished wine. TASTING NOTES Light straw yellow in color with a greenish tinge. The wine has a rich nose, with apple, pear and tropical fruit notes. On the palate it is fresh with lively acidity and a crisp finish.

Louis Jadot Mâcon Villages 2015Dry and easy to drink, lively and charming, this is a fruity wine with a floral scent and a hint of lemon, the Mâcon Villages should be drunk chilled and rather young. This wine goes very well with a large range of foods including "hors d'oeuvres", fried or grilled fish, sea food, goat's milk cheese, poultry.
Trambusti Chianti Riserva Badiolo 2013Was produced exclusively from Sangiovese grapes from the most fitting production areas. Given its marked characteristics this Chianti DOCG has been matured for over a year in oak barrels and then refined in bottles for about four months, thus enhancing its bouquet and refining its body and smoothness. It goes well with spit roasts, roast games and mature cheeses.

Castello di Meleto Borgaio Toscano Rosso 2014Deep ruby red, with notes of red berry fruits and hints of violet. Pleasantly fresh and round with soft tannins. Good persistence on the finish.
Da Vinci Pinot Grigio 2015DaVinci Pinot Grigio has a brilliant light straw color and a full, ripe palate. It is an extremely well balanced wine with a bouquet of floral aromas coupled with ripe flavors of fresh apple, citrus and tropical fruit flavors. This crisp, clean Pinot Grigio finishes with notes of minerals and a vibrant acidity. To intensify the tropical fruit characteristics and the creamy mouthfeel of the wine, approximately 10% of the blend is from Chardonnay surmaturo grapes, which are left on the vine after the initial harvest. This extended hang time results in juice that shows greater concentration and complexity, as well as a softer mouthfeel.

With vibrant acidity, typical of the extreme Sonoma Coast, this Chardonnay finishes with length and elegance.
Four Vines Naked Chardonnay 2015Brisk, refreshing and bold in its rejection of oak, our Naked Chardonnay is the essence of sunny Santa Barbara, California. Luscious aromas and flavors shine bright without being hidden under a heavy cloud of oak. Naked Chardonnay was fermented in stainless steel to preserve the wine's fruit character while aging on the lees for six months rounds out the mouth feel and adds a hint of Crème brûlée to the finish. Cellar No. 8 Cabernet Sauvignon 2013A great example of California Cabernet with a deep ruby core and intense aromas of blackberries, black cherries, spices and toast. The palate is dry with flavors of dark fruits, cloves and oak toast, supported by ripe, supple tannins and followed by a long finish.

Tobia Oscar Tobia Reserva 2011It shows bright and clean, intense red cherry color and the deep red on the border. The aroma is intense, elegant and complex. Firstly black fruit such as prunes and cherries turns up. Later it shows mineral and menthol notes with spices aromas like black pepper, cloves and tobacco trees. On the palate it is gentle, velvety, smooth and very bulky, very polished and ripe tannins. Very structured, satiny, full-bodied, powerful, round. Fleshy and ripe with a long, lingering ﬁnish.
